Balsamic Chicken with Mushrooms - Low Glycemic Index
This is an easy to make delicious chicken dish with mushroom is an essential part of your low
glycemic index recipes collection. It is flavored with the wonderful taste of balsamic vinegar, and who
isn't a fan of balsamic.
4 boneless, skinless chicken breast halves
Non stick cooking spray
8 oz white mushrooms, quartered
2 garlic cloves, minced
1/2 cup reduced sodium chicken broth
2 1/2 tbsp balsamic vinegar
1/4 tsp dried thyme, crushed
1/8 tsp ground black pepper
Heat skillet and spray with cooking spray.
Saute garlic and mushroom.
Add and cook chicken over medium heat until no longer pink.
Add chicken broth, thyme, pepper and vinegar.
Simmer for 15 - 20 minutes.
Add parsley for garnish, if you prefer.
Be very careful not to add excess vinegar because the flavor from balsamic is very strong.
