Raspberry Balsamic Chicken - Low Glycemic Index Recipes

If you are looking to zest up your chicken dishes, then this is a wonderful and flavored dish from the low glycemic index recipes collection has a fabulous taste of raspberry and balsamic.

Ingredients:

4 boneless, skinless chicken breasts
1 tsp dried thyme
1 tbsp extra virgin olive oil
1 medium red onion, diced
8 oz raspberry fruit spread (no sugar added)
1/3 cup balsamic vinegar
salt and pepper to taste

Directions:

Season chicken on both sides with thyme and salt.

Heat oil in skillet on medium.

Saute onion until golden brown.

Add the chicken breasts to skillet until both sides of chicken is no longer pink.

Remove chicken and set aside on a dish you plan to serve on.

Add fruit spread, balsamic vinegar and pepper to hot oil and onion in skillet.

Cook until spread is melted and the sauce thickens.

Pour entire content over the chicken breasts and serve hot.

Garnish with fresh berries and parsley for added presentation.

Instead of dried thyme, substitute with 1 tbsp of fresh thyme.
