Wild Rice with Apricots and Ham - Low Glycemic Index Recipes

This wild rice dish dinner is a tasty part of low glycemic index recipes collection. With the infusion of ham and a bit of sweet fruity taste from the apricots, it is sure to leave you feeling full without that over stuffed sensation.

Ingredients:

4 C of water
1 C of wild rice
1 tsp salt
1 C of chicken broth
1 C dried apricots, chopped
1 tbsp butter
1/2 sweet Vidalia onion, chopped
1/2 C of hazelnuts, toasted and skins removed
1/2 C baked ham, chopped
1/4 tsp pepper

Directions:

Pour the water into a saucepan place over high heat.

Bring the water to a boil and stir in the rice and salt.

Reduce the heat to low, cover the pan and simmer 1 hour.

Pour the chicken broth into a bowl and stir in the apricots.

Cover the bowl and let stand for 30 minutes so the apricots expand.

Place the butter into a skillet over medium high heat.

When the butter has melted stir in the onion and sauté for 5 minutes or until tender.

Place the rice into a bowl.

Stir in the soaked apricots, onion, hazelnuts and ham.

Sprinkle with the pepper and stir to combine.

Makes 8 servings

Versatile Variations:

Olive oil or margarine may be used in placed of the butter.

Walnuts may be used in place of the hazelnuts if you prefer.

Make this into a casserole by placing all the ingredients together in a large casserole dish. Dot the top with butter and place in a preheated 250 degree oven for 15 minutes.

Helpful Hints:

To achieve fluffier rice, add a little more liquid than the recipe or box instructions call for. It will give your rice a nice fluffy texture instead of those hard tasteless spikes.
