Chickpea Salad - Low Glycemic Index Recipes

Chickpea (aka garbanzo beans) is known for its delicious nut like taste and buttery texture. It provides a good source of proteins and is easily available pre-cooked in cans or dried. This salad is quick and easy to make and a refreshing part of your low glycemic index recipes collection. 


1 can of chickpeas (garbanzo beans) - drained.
1 whole fresh tomato
1 large sprig of parsley
Handful of green onions (scallions)
Half a lemon or lemon juice
Olive Oil


Drain a can of chick peas and pour into a small salad bowl.

Chop up the parsley, tomato, and green onions and add to chickpeas in the bowl.

Squeeze lemon juice over the salad and drizzle with olive oil as per your taste.

Toss until well coated.


Versatile Variations:

For additional flavor, add some fresh herbs from your herb garden.

You may substitute lemon juice with vinegar.
