Chocolate Cookies - Low Glycemic Index Recipes
You can now add this chocolate cookie to your low glycemic index recipes. It
an all time american favorite, and now it can help you stay on your sensible weight loss
plan.
Ingredients:
3oz non-hydrogenated soft margarine
3oz wholemeal flour
1 tablespoon of wheat bran
Sugar substitute equivalent to about 4oz of sugar
¼ pint cooked white kidney beans
1½oz unsweetened cocoa powder
3 fl oz skim milk
1 egg
2 teaspoons of vanilla
½ teaspoon of baking soda
Cooking
Directions:
Step 1.
Add to a food processor the beans, 1 fl. oz of skim milk, and wheat bran. Puree until
well blended.
Step 2.
In to a bowl, put together the egg, vanilla, skim milk, baking soda, cocoa powder,
sugar substitute, flour, margarine, and the bean puree from step 1, and beat it together until well
mixed.
Step 3.
Preheat over to about 375 degrees. Take the cookie batter from step 2 and use a
teaspoon to take heaping amounts and drop them onto a wax paper-lined baking sheet. Bake in 375 degree oven a for
about 10 minutes, or until they're firm.
Note: You might wonder about the
bean paste? Well, you wont be able to taste it, and additional benefits is that it keeps the batter from drying out
and adds a little extra fiber into your diet!
