The vegetables provides the protein as well as the needed fiber. The fruit gives it a wonderfully sweet taste
that even the kids will enjoy. To reduce the amount of calories in this salad, leave off the croutons and use plain
yogurt instead of mayonnaise. Better yet enjoy this salad on a bed of lettuce without adding any dressing at
all.
Ingredients:
1lb. cooked turkey breast, cut into chunks
1 zucchini, diced
1 sweet red pepper, seeded and diced
2 stalks of celery, chopped fine
2 sweet red apples, cored and chopped
1 cup dried cranberries
1 cup low fat mayonnaise
1/4 tsp salt
1/8 tsp pepper
1 cup of croutons
Directions:
Place the turkey, zucchini, peppers and celery into a salad bowl.
Add the apples and cranberries and toss to mix together well.
Fold in the mayonnaise until all the ingredients are coated well.
Sprinkle with the salt and pepper and stir to incorporate.
Spread the croutons over the top before serving.
