Pea soup is an all-time favorite that
is often forgotten and neglected nowadays. Pea not only has a low glycemic index but also helps to lower the GI
of a dish! Go ahead and try this and add it to your low glycemic diet recipes. You will love it and find
it filling and satisfying.
Ingredients:
1/2 oz unsalted
butter 2 leeks, washed, properly drained and
chopped 1 tsp chopped fresh thyme
leaves 1 garlic clove, finely
chopped 1 1/2 pints chicken or vegetable
stock 10 oz shelled or frozen
peas 1 round lettuce, washed and
chopped 1 tbsp finely chopped
mint Ground black pepper
Directions:
Heat the butter on low heat in a
saucepan, until melted.
Cook leeks with thyme and garlic on
low heat. Cook until soft but not yet brown.
Add the stock and bring to a
boil.
Add peas and lettuce. Cook until the
peas are tender. Do not overcook or they will become mushy.
Stir in the mint and add black pepper
to taste.
Serve with croutons for added
flavor.
